Beef Noodle Soup

Beef/Broth:
2 lbs beef shank, boneless (or 2-3 lbs bone-in)
2 tbsps cooking oil
2 green onions, chopped into 1 inch pieces
1 inch piece ginger
2 garlic cloves, peeled and smashed
2 fresh Thai chilies, cut lengthwise
1 tbsp sugar
2 tbps hot bean paste
1/2 cup soy sauce
1 tbsp dark soy sauce
3-4 cups water
1/4 cup Shaoxing rice wine
1 cinnamon stick
8-10 Sichuan peppercorns
2 pieces star anise
1 large bay leaf

Noodle Soup:
Chinese noodles (wheat or rice)
6-8 cups water
Baby bok choy
Fresh chopped cilantro and/or green onions for garnish
